Twice Baked Potatoes, Family Size :)



Although I know football season just ended-- there is ways the next season... football, baseball, hockey, the olypics, and because it goes well with beer.  The twice baked potatoes featured here are easy, fast, and fool-proof!  The simple and universals approach for these means that even people who think they don't like potatoes will love these ;) Enjoy

Ingredients:


5 baking potatoes

1/2c bacon bits
3/4c moterilla cheese
1/4c milk
black pepper and seasonings to taste

Serves: 5, with two per person... but you know your guest!


Time: 1 hour and 20 minutes, almost all of which is back time


These are such an easy party food- But they also go great with steak and breaded chicken!  Twice baked potatoes also freeze amazingly for the busy days of the week.


Directions:

1) Preheat the oven to 350 degrees


2) Bake five washed potatoes for 40 minutes.  Make sure you poke holes in to skin of the potatoes in several places first to avoid having to clean up an explode potato from your oven!

3) Grate or slice cheese and mix with bacon and milk. The milk is a healthier version of the butter you usually see in recipes like this :)


4) Once the potatoes are cook enough to touch-- cut them in half longways (as shown in the image to the right).

5) Scoop out the soft potato centers and add them to your bacon bit  mixtures.


6) With a serving fork or potato smasher, mix the potato thoroughly with  the bacon bit mixture.


7) Re-fill the potato skins with the bacon bit mixture to just over the hight of the potato skin-- this will help make the potatoes look decadent AND it will make sure you use up your ingredients  evenly ;)


8) Place the filled potato skins on a backing sheet and return to the oven for 30 minutes, if a crisp top is desired.  The crisp top is highly recommend! 


9) Serve hot!

Cheesy Easy Party Poppers!

Parties are definitely happening this time a year-- and warm treats are always a big hit.  This recipe is a super easy and fast guest favorite. As much as I am usually a fan of doing things from scratch, that isn't always the best plan with the holiday bustle... So enjoy this Party Poppers right out of something you would except from a 1950's kitchen!




Ingredients:

 12 slices of cheddar cheese
2-3 slices of smoked turkey sandwich meat
(Depending on thickness)
1 roll of Ready-to -Bake Biscuits
That's it!

Serves: 12 poppers... But VERY easy to scale up ;)

Time: 18 min, with 12min  of that being the baking!

Directions:

1) Pre slice the cheddar cheese into slivers that can easily be rolled into the biscuits... The size will depend on the biscuits you buy.  The slicing of the turkey is the same.

2) Assemble cheddar cheese and turkey into the biscuit, pinching shut each one to create a roll.

3) Place on a baking sheet and bake at 350 degrees for 12 minutes.  Serve hot!

And that's it!!

Red French Onion Soup

So French onion soup is another one of those dishes that can be very expensive but doesn't have to be.  It is always an elegant meal, and only moderately time consuming.  Whether you are pairing it with a grand main course, or it is the main course, just remember to have a little fun with it too!

Ingredients:
1 red onion
1 white onion
1 can beef consume
1/4lb soft white cheese (mozzarella will work fine)
6 slices white bread (preferably a french loaf)
seasoning (see directions)
Serves: 2 for dinner

Time: 1 hour

Directions:

1) Start with a little olive oil or butter in your pan, to help the sliced onions brown.  This always take more time than you think-- And being French Onion soup, is really important. Feel free to season as you like as well.  Black pepper and a little salt are always good places to start! Garlic and a splash of wine are classics too.



2) While you are turning the onions over until they are soft and well seasoned you can prepare the bread and cheese.  The cheese needs to be in large slices, as with the bread.  If you have a true French loaf, cut the bread at an angle so make the slices seem larger.  I used Italian sliced bread because it was on sale, but any soft white bread will work well enough.  Just make sure you cut off the crust!
3) Preheat the oven to 425 degrees.

4) Add one can of beef consume and 2 cans of water to the cooked onions.  You can also preheat the consume mixture in a sauce pan to safe time.
5) Once everything is hot, included the oven, start to layer the bowls with your soup. First add some of the onions and consume to the bottom of the bowl.  Then add a piece of the bread.  Then cover in cheese slice(s).  repeat until the bowl if full.  About three slices makes for a filling and beautiful dinner!



6) After you have finished layering the soups, place on a baking sheet and then into the oven!  back for 15 to 20 minutes.  Serve hot!

Note: Onions are not traditionally on top of the bread.  I just think it's a pretty finish :)

Marbled Quiche with Potato Crust

Although the name "cobalt" may make you think of blue, this quiche is pretty much all the warm colors that warm colors could be ;)  Quick, easy, cheap, and transports well-- Quiche is another one of those meals for the weeknight that make you feel like you are living in style while on a budget!  It then transports well to work the next day for lunch as well :)
Ingredients:
filling
12 eggs
2c marbled cheese chopped
1/2c broccoli, fresh or frozen
2c celery, chopped
crust
1/2c potato flakes
1/2c flour
1/5c water
1tbs oil

Time: 
                    12 min to prepare
                    45 min to cook        
Total            about an hour

Serves: 8+ servings


Directions:

1) Preheat the oven to 350 degrees F.

2) Combine all the filling ingredients in a mixing bowl, and mix until all the ingredients are well coated with the broken eggs.

3) Mix the crust in another bowl, (or right in the mixing cup as pictured to the left and right)! You can easily mix the crust with a fork.

4) With your fingers, coat the bottom of all the future quiche pans with a thin layer for the crust mixture.  Take you time- There is no baking soda in this recipe!  If you run out of crust, you can make more.   You do want the bottom covered, or serving could be difficult.

5) Add the filling mixture to the dishes and pop in the oven! I like to keep the cheese chunky, because as it cooks the cheese will darken first, giving the finished result of a marbled look-- To go with the cheese!
6) Bake for 45 min, or until above mentioned marbled look is achieved.  Serve hot or chilled!

For the work days: A Hearty, Comfort Food, Bake Dish Potato Casserole II

This one is with meat!  As much as I'm all for being vegetarian friendly, (for both environmental and for cost reasons),  my husband and I do love our meat.  That said, its another week day, so something quick and easy is in order :)

Ingredients:
1             bake potato
1 c          broccoli
1/2          bell pepper
1/16 lb.   Monterey Jack Cheese
2             sausages
seasonings to taste
2 tbs       half&half

Time:
15 min to prep
30 min to bake
45 min total*

Serves: 2 people

*What makes this dish quick is you can do all the prep the morning or even the day before and then just cover it and stick it in the fridge.  Pop it in the oven when you walk in the door, and by the time your ready to eat, dinner is "magically" done!

Directions:

1) Skin the potato.  It doesn't have to be perfect.  If you are going to leave some skin on, then you should make sure the potato is scrubbed extra thoroughly before you start.

2) Chop the potato into slim chunks ( and yes I know that's an oxymoron) and place in the bottom of your 8X6 or 8X8 casserole dish.  If you are making this dish for more than 2 people, then you will need to double all ingredients accordingly and increase the dish size.

3) Add the half&half and turn over the potato pieces to make sure they are all covered.  This is particularly important if you are preparing the dish in advance, as it keeps the potato from browning.  Even if you are preparing this dish in advance, this will make the potato not stick to the bottom of the dish and you still want to add the half&half.  The higher fat content of half&half will make it taste richer, but feel free to substitute.

4) Pre heat the oven to 350. Or do this step at the otherwise appropriate time :)

5) Layer desired veggies and meat.  In this case I fire roasted the bell pepper (and then scrubbed the burned skin off) to give the dish a sweeter taste.  As you've probably noticed, I am a big fan of broccoli.  The sausage does not need to be precooked, and actually works better if you don't!

6) Slice and layer the cheese on the top of the casserole.  Feel free to add seasons of choice.  I chose: Fresh rosemary, dried thyme, black pepper, and a dash of garlic powder.

7) Cover and place in the oven.  Cook for 30 minutes.  Serve hot!

Asian Fusion Pizza!

So it's a Sunday, and I feel like pizza :)  But not just any pizza: Asian Fusion Pizza with sesame and garlic based sauce topped with Muenster cheese, onions, broccoli, sausage and fresh greens!  Served on a Agave pizza crust!
Ingredients:

The Pizza!
1/4      white onion
1c       grated muenster cheese, ( for finally chopped)
4 tbs   Asian Toasted Seasame Seed Dressing
2-4     sausages, pretty much any kind, cooked
1 1/2c spring greens, washed
1c       fresh broccoli

The Dough!
(This should make you think twice about buying ready made pizza crusts!)
2 1/2 c all purpose flour
1 tbs    agave
1 tsp    salt
1 pkg  quick active dry yeast (or Rapid)
3 tbs   olive oil
1 c.    very warm water
(But no boiling!  Boiling will run the risk of killing the yeast)

Serving: 4 people, easily
Time: 1 hour all in

This recipe will definitely demonstrate what a hodgepodge cooker I am.  If it's in the fridge, it's game to be used!  Point and case, the "sauce" for this pizza is salad dressing-- And it will be amazing!!  Just trust me :)

For recipe involving dough, you always need to read the whole recipe first to know if you need to make the dough first or the 'filling,' so to speak.  Timing is much more important if anything has yeast in it.  There are precise chemical reactions going on to make your food yummy!

For this recipe, and all pizza recipes, start with the dough.

Directions:

1) In a large mixing bowl, add the flour, salt, package yeast, and agave.  Do not mix yet.  There are a lot of pizza recipes out there that get very elaborate at this point.  Although this is an important step, getting fancy doesn't make the dough taste better nor does it make your time in the kitchen more enjoyable.

2) Add the warm water evenly over the top. Slowly pour until you can no longer visibly see the yeast.


3) Mix thoroughly for 5 to 7 minutes.  The dough should be between tacky and stringy at this point.  Add more flour or warm water as necessary.  Be careful with the water-- A little goes a LONG way.

4) Ball the dough loosely in the middle of the bowl and cover loosely with cling wrap.   Do not use a damp cloth unless you hate that cloth-- I have definitely wrecked cloths that way.


5) Set aside for 30 min.  If you aren't ready for dinner just yet, set in the fridge for 3 to 4 hours.

6) Prepare the toppings, including grating or chopping the cheese.

7) This is also a good point to start preheating the oven to 400 degrees.  If thick crust, 375, and if thin crust 425 will work best.

8) Once the dough has more than doubled in size, with floured hands and on a floured surface, work the dough into the round disc everyone associates with pizza!

9) Place the dough on a backing sheet, that has flour or cornmeal spread on it, for easy lift off at the end :)

10) Add the dressing 'sauce' to the dough, and spread around smoothly with the back of a spoon up to 1/4 inch from the edge of the dough.

11) Add cheese and toppings as desired.

12) Bake for 20 min OR LESS.

13) Add the fresh greens to the top of the pizza after slicing.

14) Serve warm!
